This is a beautiful enough meal to serve to company,
but quick & yummy enough for a weeknight family dinner!

Okay, girls, you know I look for ALL the ways to SIMPLIFY LIFE. Well, cooking is no different for me! I hardly cook these days, but when I do, I am looking for SIMPLE food – simple to prepare & simple healthy ingredients – and YUMMY taste!

I ran across this recipe the other day & thought it would be something my family might enjoy that I could throw together after work. It turned out sooo pretty & was so delicous that we scarfed it right up! I thought you’d want to try it too!

In fact, my bad….I didn’t even get a picture. 🙁 So here is the picture from the original recipe – which I naturally modified a bit..and didn’t measure. So you can look at that as “oh no, she might not be giving me the exact right measurements!” or as “oh great, this is obviously one of those can’t mess up recipes because she didn’t even measure and it turned out yummy.” We choose how we see life…I suggest going with that second option!

If you try it, let me know what you think & any modifications you love. I thought about kalamatas…but I always think kalamatas when I do Mediterranean. 🙂 You can definitely sub or add fave veggies – or even protein.

SIMPLE MEDITERRANEAN SHRIMP (serves 4)

  • 1 – 1.5 lbs raw shrimp (peeled)
  • 2 -3 garlic cloves, minced
  • 2 zucchini, chopped
  • 20 (or so) grape tomatoes, quartered
  • 4T butter, divided (if you haven’t used Kerrygold, BUY IT!!!)
  • sea salt (or whatever you like) & pepper, to taste
  • dried oregano, to taste (or fresh)
  • crumbled feta (enough to sprinkle on top)
  • lemon juice or zest (enough to sprinkle on top)
  • cooked rice (optional)
  1. Saute minced garlic in 2 T butter over medium heat until golden – yummy smell – not long! I used a cast iron pan because I love the browning you can get!
  2. Add chopped zucchini & tomatoes (you can add tomatoes a little after zucchini if you don’t want them quite as cooked). Probably 5 minutes. (I was talking to my son at the same time – this is so forgiving!)
  3. Move the veggies from the saute pan while you cook the shrimp.
  4. Melt the remaining 2 T butter & add the washed/dried shrimp. Cook until golden or not pink (maybe 3 minutes per side!). You can add more garlic or butter if needed. 🙂
  5. Add the veggies back to the saute pan and mix together with the shrimp. Add oregano, salt and pepper to taste.
  6. Plate your veggies & shrmp with or on some rice. I don’t eat rice (not a grain girl!) so I had mine plain & it was still fabulous!
  7. Top with a sprinkling of feta and lemon juice/zest on each serving. (for that final Mediterranean touch!)
  8. Voila – you are done! Enjoy the ooohhs and aaahhs of those who get to eat it!
